Cold Kitchen Preparation (FSCR 0609)
This course covers the following topics:
Students get a further opportunity to utilize their knife cutting skills when preparing for salads. A variety of salads and dressings are prepared. Presentation and consistency are emphasized.
Students learn how to identify different types of bread, build a variety of sandwiches, and prepare them for the consumer.
Students learn how to safely store and prepare a variety of meats for sandwiches. Basic methods of meat and poultry cookery are introduced.
